Spring Rolls with Avocado recipe bring unseasonably good taste with healthy ingredients and oh-so-amazing Thai Peanut Sauce. (Gluten-Free, Dairy-Free, Vegan, Low-Sugar)


ingredients:
  • Avocado, sliced and peeled
  • broccoli or bean sprouts
  • sliced white mushrooms
  • rice paper wrappers
  • Thai Peanut Dipping Sauce
  • 1/3 cup creamy peanut butter (sunflower butter works great also for nut-free option)
  • 1/4 cup gluten-free soy sauce
  • pinch ground ginger
  • pinch red pepper flakes
  • juice from 1/2 a lime
directions:
  1. For peanut sauce: In a small bowl mix peanut butter, soy sauce, ginger, red pepper flakes and lime juice. Set aside.
  2. Gently dip a single rice paper wrapper into warm water. Place onto cutting board. Arrange avocado slice, sprouts and mushrooms into wrapper middle. Pull in two sides of wrapper, tightly roll from the bottom up to create a spring roll. Continue until 6 spring rolls are made.
  3. Dip into Thai Peanut Dipping sauce and enjoy!
